This ghee is prepared during the full moon. Only 12 small batches are prepared throughout the year, using the milk of free-grazed, indigenous breed Gir Cows.
What is gir cow
Gir cow is an indigenous Indian cattle breed native to Gujarat. It is known for its high milk yield and produces A2 milk. This milk is easier to digest and rich in nutrients. Gir cows have a distinctive appearance with a hump, long ears, and a curved forehead. They are very hardy, disease-resistant, and yield highly valued milk.
How is desi gir cow ghee made?
Desi Gir cow ghee is traditionally made using the Bilona method:
First, fresh A2 milk is obtained from Gir cows.
Then the milk is boiled, cooled, and naturally fermented into curd.
The curd is then hand-churned using a wooden Bilona to extract the butter from it.
The butter is slow-cooked on a low flame to obtain pure golden ghee.
The ghee is filtered and stored in containers.
