Ingredients of Aam Achar

  • Raw mangoes (cut into pieces)
  • Mustard seeds
  • Fennel seeds
  • Fenugreek seeds
  • Red chili powder
  • Turmeric powder
  • Asafoetida (hing)
  • Salt
  • Mustard oil

Aam ka achar recipe

  1. Wash the raw mangoes thoroughly with running water. Pat them with cotton clothes to dry.
  2. Cut into smaller pieces.
  3. Mix mango pieces with salt and turmeric. Then sun-dry for a day.
  4. Dry roast mustard, fennel, and fenugreek seeds. Grind the spices coarsely.
  5. Heat mustard oil until it smokes. Let it cool slightly.
  6. Mix mango pieces with the roasted spices, red chili powder, and asafoetida.
  7. Pour warm mustard oil over the mixture and mix well.
  8. Store in a clean, dry glass jar and let it mature for a few days before consuming.

  • Always use a clean and dry spoon to prevent spoilage.
  • Store in a glass jar with an airtight lid.
  • Keep in a cool and dry place.
  • Ensure oil covers the mango pieces to preserve freshness.
